      Caprese on a Skewer
 
If you can find them, baby heirloom tomatoes are wonderful to use to make these skewers. They are best made the same day they will be eaten, since the basil might tend to wilt. If you can’t find fresh basil, substitute baby spinach or leaf lettuces. Invite children to help assemble these beautiful and easy appetizers.
  • 2 12 oz. cartons small marinated fresh mozzarella balls, drained
  • 1 16 oz. carton cherry tomatoes
  • 80 fresh basil leaves
  • 40 5 or 6 inch wooden skewers


Onto each skewer thread the ingredients in this order: cherry tomato, basil leaf, mozzarella ball, basil leaf, cherry tomato. The skewers look great served vertically in a bowl rather than laying flat on a platter! Serves 40

Note
If you can't find small marinated fresh mozzarella balls, cut large fresh mozzarella balls into one inch pieces and marinate in extra virgin olive oil and mixed fresh or dried Italian herbs for a few hours or overnight.
