      Vegetarian Luau
 
This recipe was given to me by my friend Sandy. It’s so easy, and is a good recipe to serve to groups or take to potlucks.
  • 1 1 lb. roll Worthington Chic-ketts®, thawed
  • ¼ c. butter
  • 5 13.5 or 14 oz. cans spinach, drained
  • 1 13.5 fl. oz. can coconut milk (can use 2-3 cans for richer flavor)
Cut or tear Chic-ketts® into bite-sized pieces. Sauté with butter in pan till browned. Add spinach and coconut milk. Cook till boiling. Serve over cooked rice.
