After being gone from home on a trip, home cooked meals really sound good. This recipe is one that fits the bill. I like it because the “meatballs” are baked, not fried.
5 eggs
1 c. shredded cheddar cheese
1/2 c. lowfat cottage cheese
1/2 c. finely chopped onion (or 1 T. onion powder)
1 c. walnuts, finely chopped
1 t. dried basil
1 t. salt, divided
1/2 t. sage
2 c. seasoned bread stuffing
1/4 c. oil
1/2 c. vinegar
1 c. apricot jam
1 c. catsup
1 t. onion powder
1 t. oregano
Preheat oven to 350 degrees F.
Mix together eggs, cheese, cottage cheese, onion, walnuts, basil, 1/2 teaspoon salt, sage and stuffing; form into walnut-size balls. Place balls in a greased 9 x 13-inch baking dish. Combine remaining ingredients; pour over top.
