      Sweet & Sour “Meatballs”
 


After being gone from home on a trip, home cooked meals really sound good. This recipe is one that fits the bill. I like it because the “meatballs” are baked, not fried. 

  • 5 eggs
  • 1 c. shredded cheddar cheese
  • 1/2 c. lowfat cottage cheese
  • 1/2 c. finely chopped onion (or 1 T. onion powder)
  • 1 c. walnuts, finely chopped
  • 1 t. dried basil
  • 1 t. salt, divided
  • 1/2 t. sage
  • 2 c. seasoned bread stuffing
  • 1/4 c. oil
  • 1/2 c. vinegar
  • 1 c. apricot jam
  • 1 c. catsup
  • 1 t. onion powder
  • 1 t. oregano

Preheat oven to 350 degrees F.

Mix together eggs, cheese, cottage cheese, onion, walnuts, basil, 1/2 teaspoon salt, sage and stuffing; form into walnut-size balls. Place balls in a greased 9 x 13-inch baking dish. Combine remaining ingredients; pour over top.

Bake for 35 - 40 minutes. Serves 8
