This recipe is super easy. We made this often when our girls were growing up for a quick weeknight dinner. Don’t ask me where the name came from, it just sort-of happened! 

  • 1/2 lb. elbow macaroni
  • 1 c. frozen corn kernels
  • 1 12 oz. Morningstar Farms® Meal Starters™ Grillers® Recipe Crumbles™ (or other similar product)
  • 1 T. olive oil
  • 1 t. onion powder
  • 1/2 t. garlic powder
  • 1 2.4 oz. can sliced olives, drained
  • 2 c. marinara sauce
  • 1 c. shredded cheddar cheese

Cook the macaroni in boiling salted water until tender. Add the frozen corn about 2 minutes before macaroni is done. Drain both well in colander, rinsing quickly with warm water.

While macaroni is cooking, brown the Grillers® Recipe Crumbles™ in a large skillet with the olive oil, along with the onion and garlic powders. Add the olives and the marinara sauce. Stir in the macaroni and corn. Heat together until bubbly.

Serve with grated cheese on top. Serves 6

Note
Make the recipe Mexican style by using plain tomato sauce or Mexican stewed tomatoes and adding 1/2 teaspoon each of cumin and chili powder, or to taste.
