      Fresh Glazed Strawberry Pie
 


Every year, my husband and I celebrate the anniversary of our first date with a fresh glazed strawberry pie. Yes, there is a story behind it!

While we were both students at Pacific Union College in Angwin, Calif., Jim asked me to go with him to the Lakeport SDA Church to hear him preach as our first date. He had to ask twice because I couldn’t imagine a first date to hear someone preach and I needed convincing it was for real. After I finally said I’d go, I asked if I could bring something to the potluck. He said no, because we were the guests. I responded that I was going to make a fresh glazed strawberry pie! Don’t ask me where that came from. I didn’t have anything I needed to make such a pie in the dorm, much less know how to do it. Naturally, he wanted me to bring the pie.

When we got to the home where potluck was happening, before lunch began, he asked me to cut him a piece and hide it so that he could be sure to have a taste. He got the piece, and the rest is history! 

Each year we have a fresh glazed strawberry pie on May 15 that we either make or sometimes buy depending on the circumstances that year. I hope you’ll be able to create your own special memories as well!

Recipe
Make and bake your favorite pie shell. Then take about 4 oz softened cream cheese and mix it with a bit of sifted powdered sugar and milk to sweeten and soften it. Spread it all around the bottom of the cooled crust.  

Cook up a box of strawberry Danish Dessert Pudding, Pie Filling and Glaze by Junket using the pie filling directions. Let it cool. Spread a little over the cream cheese. Arrange a layer of washed and hulled whole strawberries over the cream cheese, with the hulled side down so they point up. I try to use the biggest berries in the center and radiate out with smaller ones to cover the bottom of the pie shell. Sparingly cover each berry with pie filling. Add another layer of strawberries. Use up remaining pie filling to cover all the berries. Refrigerate to set. Serve with whipped cream, of course!

Note
• The thing I love about using Danish Dessert is when you cut the pie, it keeps the pie wedge shape and doesn't collapse. Plus, it's very yummy. It can be hard to find, but is generally available in specialty markets or on-line.
• Danish Dessert comes in raspberry too, so try the pie using it and fresh raspberries!! Yummmm!
