      Herbed Zucchini Stix
 


Over the 4th of July weekend, Jim and I spent several hours cleaning our garage. There were boxes of recipes and cookbooks from both of our families that I sorted through. I set aside a cookbook about zucchini and carrots because we have a bumper crop of zucchini in our garden. When it came time to figure out something quick for supper, I browsed thru the book and got the idea for the following.

This is a recipe without specific ingredient amounts.  Something different!  It’s tasty, low fat, and quick to make.

  • 1 small to medium zucchini per person
  • Olive oil cooking spray
  • Salt
  • Garlic powder or salt
  • Italian or French herbs
  • Grated parmesan cheese

Preheat the broiler to the high setting. Place one of the oven shelves about 6 inches from the broiler flame.

Wash and dry zucchini and cut off ends. Cut in half lengthwise, then cut each half in half again lengthwise.  Shorten each length into about 3 inch pieces. The goal is to have pieces about 3 inches by about ½ to ¾ inches in size.  Lay pieces side by side on the cutting board.

Spray a baking sheet and the zucchini stix with olive oil cooking spray. Sprinkle zucchini with salt, garlic powder or salt, herbs and parmesan cheese to taste. Turn stix over and repeat the spraying and sprinkling. Place stix on the baking sheet.

Place on prepared shelf under broiler.  Broil about 12 minutes, turning stix a quarter turn every 4 minutes until they are golden and cooked through.  Serve as a side dish, or a snack with ranch type dressing for dipping.
