Recently I have been introduced to Spanish food by a couple of my good friends, Barry and Joana. I love to try new cuisines, and to learn how to make them as well. This is pronounced
“pom tumahkit” which translated means bread with tomato.
This recipe is so simple that it’s almost not even a “recipe” per se! Simple is many times the best! So when you have very ripe tomatoes and you think the only thing to make with them is a sauce, think again!
Valencian Version
Tomatoes - riper is better
Extra virgin olive oil, to taste
Salt, to taste
Minced fresh garlic, if desired
Baguette
Cut the tomatoes in half. Holding them by the skin, grate the flesh down to the skin into a bowl. Drizzle with olive oil and sprinkle with salt. If desired, stir in garlic.
Slice the baguette. It can either be left plain, or it can be toasted or grilled. Spoon the tomato mixture onto the bread and eat!
Note To prepare this dish in the Catalan way, rub the flesh of the tomato directly onto the bread, then drizzle with olive oil, sprinkle with salt and dot with garlic if desired.
