      Ironed Quesadillas
 


It was great fun to have Zach Dunn and fellow students from Pacific Union College in Angwin, Calif. come to my home to film a Student Association sponsored show called Food For Thought. The show can be seen by going to the Helpful Links page of this website.

We filmed recipes to cook in a dorm room where resources are limited. What to use to make quesadillas?  How 'bout an iron?!

  • Fajita or soft taco size flour tortillas
  • Favorite shredded cheese
  • Favorite margarine or softened butter
  • Any other add-ins you like

Prepare an ironing surface by taking one of your largest textbooks and covering it with a towel.  Wrap the top and over the sides with nonstick foil, nonstick side facing out.  OR Cover a cookie sheet with nonstick foil and place it on a towel on a table or desk. OR Cover an ironing board with nonstick foil, being careful not to tear it!

Empty the water from an iron and securely cover the entire heating surface and sides of the iron with nonstick foil, nonstick side facing out.  Be careful not to tear the foil, as it will need to be redone if it’s torn. OR Use a large sheet of nonstick foil to place over the food to be ironed.  Plug in the iron and heat it to the highest non-steam setting.

Butter the outside of a tortilla.  Place it butter side down on the prepared ironing surface.  Sprinkle shredded cheese and any add-ins on ½ of the surface.  Fold over the uncovered side and iron till golden.  Turn over and iron the other side till golden.
